Looks fantastic Ted!!!!

I grilled up some salmon , halibut , sweet potatoes , and zucchini . Sorry no pics. Been eating this way (right ) since mid June from a health scare and have now lost a little over 35 lbs ! ( now 225), and feeling much better! 15 more to go to 210, where I'd like to be since I'm pushing 6'2". Don't wanna waste away to nothing! Wifey says I now suffer from noassatall lol !
I'm trying to get more fish and seafood meals in my diet. Sounds like you have a good plan going that's working for you, congrats keep it up.

Grilled halibut, saluted assorted squash with spinach and fresh garlic, and some red onion and garlic infused brown rice. I'm pattin myself on the back boyz, .......I'm just about 50 pounds lighter than I was in the middle of June . Weighing in at a svelte 214 pounds!!!!! ( 6' 1.5") . Crap ! Gotta spend some cash on new clothes this week.

Had a pork loin, some chicken legs, and potatoes in the smoker yesterday. All turned out pretty dang good. Loin was juicy and tender. Same with the chicken. And I love getting some smoke flavor into potatoes. Only snapped a pic of the chicken tho.

Thanks, I think its going a little better each day. Had a doctors appointment today and just going and doing that seemed to wear her out. Told her to take the rest of the week off and gave her some stronger meds. Guess I may have to take the rest of the week off also, shes dizzy all the time and not to steady on her feet. Don't need her falling down or something with no one around.

Not the weekend , but just grilled some chicken in fresh garlic and ginger with some balsamic added towards the finish. Tonight it goes over salad with some fresh grated Parmesan and Romano cheese. Some leftovers will make for some tasty chicken salad with a home made garlic and onio avocado mayo.

Use mine all year long . Wouldn't be the first time I've grilled in a snow storm, and I'm sure it won't be the last . Steaks tomorrow , but covering it up for Saturday. Not due to snow though, .......just those 50 something mph winds we're suppose to get .

Tacos anyone?
So I had gotten some skirt steaks from RD a while back and decided I'd try and do some tacos out of it. Thawed out and marinated it for three hours.

I'll agree with you on lean burger meat not being the best for burgers but sounds/looks like yours came out really good. Have you ever mixed Lipton Onion soup mix in your burgers? Another favorite of ours I'd Old Bay Seafood seasoning.

I also switched to using the beefy onion Lipton soup mix rather than the regular onion. Better tasting burgers IMO .

I was too busy to take any pics, but had a little cookout for my t-ball team last night. Had some awesome hamburger donated by a parent from one of the cows he "raised" made some 1/3lb patties and threw em in the smoker for about an hour then finished em off on a hot grill. Turned out awesome. Given the time I will be cooking my burgers this way from now on.

Thanks for the kind words, and YOUR WELCOME ! It's not always easy Drew , as you well know. I stay away from the bad stuff, but I don't deny myself either. Denying yourself can make you say eff this and make costly errors. Instead , I'll have a taste or small bite of something and make sure I have some good fats and protein with any "bad" carbs to slow down the rise in bg so it gets worked off. And I'm not perfect ...... I do slip occasionally , but it's a conscious slip or if you will a planned slip. That's to say , if I have something "bad" for us , I factor that in and don't have other carbs with it and make sure I have the time afterward to work it off. I try not to let setbacks eff with my head, and remind myself that this disease constantly changes, its not a sprint but a marathon and I'm all in for the long haul ! It sucks but it is what it is, and knowing that my words and situation can And has helped out others is what keeps me on track also. Congrats to you on your hard work , it's well deserved! And if ya slip and fall get up and run again, .......cause your never outta the race if your still in it ! Eat well, exercise, live , laugh, love and constantly stay the course my friend. Proud of ya for getting back up and staying in the race !!!!! I know it hasn't been easy for ya.

This mornings breakfast Drew...........
6 ice cubes , cup chiobani plain yogurt (11 carbs 20g protein) , two tablespoons organic natural peanut butter (6carbs), half cup or so blueberries and 3 or 4 average size strawberries (I think like 14 carbs), small hanfull walnuts (maybe 2 carbs, source of good fats), I small ( 2 to 3 inch piece ) green banana (couldn't handle any until recently ) ( less ripe = less sugar). No more than 40 total carbs consisting of good fats, protein, and good carbs.( I eat from 80 to 150 carbs spread out in a day)(At one time Drew when my sugar wasn't stable and up and down , I couldn't handle this smoothie, but over time with diet and exercise and testing a lot before and after meals I learned what my body can handle ( for now ) And seem to be able to handle more carbs in the morning. Things could change next week or next month or next year, but if and when it does I'll make adjustments and push forward .

Oh yeah, forgot . Had an egg white with a little fresh chopped spinach too

I have a huge deer back strap. What's the best way to season and cook it? I am a first timer on this huge piece of meat.
Well a lot of people soak venison in Italian salad dressing or milk to remove the gamey taste, that's up to you. Venison is very lean so some will wrap it in bacon to help prevent it from drying out, again your choice.

Here's a quick grill recipe.

GRILLED VENISON LOIN

1 to 1 1/2 pound piece of venison loin or beef fillet mignon
Olive oil
Salt
Your favorite BBQ sauce

Coat the venison backstrap in oil and salt well. Set aside for 20 minutes at room temperature.

Get your grill hot, clean the grates and lay the venison on the grill. Paint with the BBQ sauce. Keep the grill cover open. Let this cook 5 to 8 minutes without moving, depending on how hot your grill is and how thick your venison loin is. You want a good sear, with good grill marks, on that side of the meat. Flip and repeat on the other side, painting that side with more BBQ sauce.

Do the finger test to check for doneness. If the venison needs some more time, turn it to sides that have not had direct exposure to the grill and cook for 2 to 3 more minutes, checking all the way. Paint those sides with BBQ sauce, too.

When the meat has been cooked to your liking, take it off the fire and let it rest, tented with foil, for 10 minutes. Serve with BBQ sauce on the side.

VENISON STEAKS WITH CARAMELIZED ONIONS AND MUSHROOMS

Prep Time: 10 minutes

Cook Time: 45 minutes, mostly to caramelize the onions

1/4 cup unsalted butter, divided
3 onions, peeled and sliced from root to tip
Salt
1 teaspoon dried thyme
2 teaspoons honey (optional)
1 pound venison (elk, deer, etc) backstrap, preferably in one piece
Porcini powder (optional)
1/2 pound fresh mushrooms, sliced (ideally hen of the woods a/k/a maitake)
3 tablespoons fresh chopped parsley
Dandelion leaves, for garnish (optional)

Start by caramelizing the onions. Heat 2 tablespoons of the butter in a large saute pan over medium-high heat. When it’s hot, add the onions and toss to coat. Cover the onions, turn the heat down and cook slowly, stirring once in a while. You are looking for them to slowly soften and brown, not scorch on the edges. After 10 minutes or so, they’ll start to get soft. Sprinkle salt over them and let them cook some more. When they are just starting to brown, add the thyme and honey. Cook until they are a nice brown. Remove and set aside. The onions can be made in advance.

While the onions are cooking, take the venison out of the fridge and salt it well. Let it come to room temperature the whole time you are cooking the onions; this is especially important if you are using elk or moose backstrap, which is thick.

When the onions are done, wipe out the pan and add the remaining butter. Pat the venison dry with a paper towel and sear it over medium-high heat, turning it to make sure all sides are well browned. Use the finger test for doneness to determine when to take it out of the pan. Let the meat rest on a cutting board. If you have some, roll the venison in the porcini powder as it rests.

While the venison is resting, put the mushrooms in the pan and turn the heat to high. Sear the mushrooms until they release their water; this might not happen with hen of the woods. When the water has almost boiled away or when the mushrooms begin to brown, add some more butter and saute hard until the mushrooms are nicely browned. Salt them as they cook.

Once the mushrooms are ready, add back the caramelized onions and the parsley and toss to combine. Heat through and put some on everyone’s plate. Add the dandelion leaves if you are using them. Slice the venison into medallions and serve.

I chop up an assortment to last the week. And get you some good fat in there . ( avocado). Or just a handful of walnuts or some other kind that you like . I shoot for some good slow digesting healthy carbs, some protein , and some good fats in every meal . Usually 5 small meals a day . Or 3 meals and 2 healthy smoothies .

I haven't been doing the smoothies yet. Usually when it's hot out is when I bring them in. But yes. I'm 5-6 meals a day. I changed my entire diet. Shredded 22lbs since feb 7th. 190 is the first goal. And I'm almost there. Then back to martial arts by may. That's goal #2

Ur welcome . I had to get a bit more creative with food to fill myself up, and learn a crapload about nutrition after I got that damn diabeeeetus ( wilfred Brimley commercials ). But almost two years later and still 75 lbs lighter at about 210 and the blood sugar is better than most non diabetics . And that's without the Meds . Just diet end exercise . Drew is doing fantastic with this also . Proud of em . He took the bull by the horns and made some changes .

I'm just setting small goals. So I can manage them and meet them. I really want to get back into Kung fu 2-3 times a week in may. But I also don't want to go in half ass. Cause when I'm in. I commit. I have a shadow now. I'm not just teaching him I'm teaching him how to teach his son one day so I want to do it right. Hopefully it pays off.

Thanks and ur welcome . But I don't kid myself ,I'm far from perfect . I make mistakes with them all the time( just ask em ) lol ! I'm learning as a parent, ....... and a person all the time . Enjoy every minute with the little guy, and take lots of pics and video. I got a lot but wish I had more . Also wish I would have kept like a running journal in a notebook of things they did and said or accomplished ,...... with dates and times and details and such . Ya never really forget a lot of stuff but the waters get muddied over time as you age lol . Started writing stuff down last year . I think it'll be interesting and comical later on and something the kids can look at and show their kids

Here you go Joe. Two whites, one yolk, with red peppers, baby spinach, some onion, little avocado ,chopped garlic and ginger , in a low carb veggie wrap, some humus, and leftover lean sirloin. With a halo, and big handful of mixed walnuts, almonds , cashews and peanuts . Yep I listed each ! Ya didn't think I was just gonna say .... "And a big handful of nuts" did ya ?!!? Lol !

That's a pretty nice unit. Newer version of the MES I have. It's pretty nice to basically set it and forget it.
Does that one have Bluetooth to monitor temps on your phone?

I was going too. But my son has a 3 birthday parties on sat. And I'm going to see Iron Maiden on Sunday. I am going to the nationals at English town next weekend. Carlisle is going to huge this year. Lots of performance
